Upside down Tomato Spinach Cake

I believe all recipes come with a little story of their own. That is what make our culinary adventures so interesting. Whenever I create a recipe or cook from one, I always remember the circumstances related to it. That is what happened yesterday when I baked this cake. It was a spur of the moment decision, I had no intention of baking anything at all. The story goes something like this. I was on my own at home,  quite bored actually and wondering what I should cook for lunch. Cooking a single serving is something I don’t do too well. Somehow it does not seem worth the effort. Then I discovered that I had a bunch of slightly wilted spinach in my vegetable tray.  It was absolutely no good for a salad, because I like my salad greens fresh and crisp. The only other alternatives were either to cook it in a curry or in a casserole.  I did not want to do either, I mean a curry meant I would need some kind of accompaniment, which meant more cooking. Then it hit me, I would make a spinach tart. A small one. And have a slice for lunch with maybe a piece of toast or just by itself. Well, to cut a long story short, I realized I did not actually have time to make and rest pastry dough. So, I decided to use my tart ingredients, add some tomatoes and bake a cake. A sort of crust less tart, but with all the flavors of spinach. Believe me I enjoyed my lunch, my cake was filling and I had two slices. I hope you find it a happy addition to your brunch table. Upside down Tomato Spinach Cake

A savoury cake with tomatoes,spinach and cheese. Good for any brunch table.
  • Tomatoes : 2 small, thinly sliced
  • Sugar : 2 tsp
  • English mustard : 1 tsp
  • Spinach : 150 gms , chopped roughly
  • Garlic ; 3 cloves, crushed
  • Paprika : ½ tsp
  • Pepper : 1 tsp
  • Salt to taste
  • Buttermilk : 100 ml
  • Eggs : 3
  • Flour : 175 gms
  • Baking powder : 2 tsp
  • Cheddar cheese : 250 gms, grated
  • Vegetable oil : 150 ml
  1. Preheat oven to 180 degree centigrade
  2. Grease and line a round 9 inch cake tin with parchment
  3. In a heavy saucepan, caramelize sugar till a rich gold
  4. Whisk together mustard with 1 tsp water.
  5. Remove saucepan from heat and whisk in the mustard, carefully. It will splutter.
  6. Evenly coat the bottom of the cake tin with the caramel- mustard sauce using the back of a spoon.
  7. Layer tomatoes in a single layer over the sauce.
  8. In a large bowl, beat together eggs, buttermilk and oil till smooth and homogenized
  9. Sift together flour, baking powder, paprika, salt and pepper.
  10. Fold into the wet ingredients.
  11. Fold in spinach, garlic and cheese.
  12. Spoon cake batter over tomatoes and smooth the top. Sit for 10 mins.
  13. Bake for 45-50 mins or till done.
  14. Remove from oven and let cool for 10 mins
  15. Turn out onto a plate and peel off the parchment paper
  16. Serve warm.
